Butternut Squash Bisque

Several years ago I saw the pairing of butternut squash and banana in a magazine or book. I thought with the addition of sesame it would make a very interesting twist on butternut squash bisque—familiar but also a bit unexpected.

I believe in always starting vegetable bisque with a great, well-rounded stock. That’s what will give your soup its backbone. For my recipe I started with MINOR’S Natural Gluten Free Chicken Base and Ready-to-Use Sesame Sauce. The sauce, butternut squash and banana all play off each other perfectly. The primary squash flavor is elevated with a touch of nuttiness from the sesame sauce and the subtle yet unexpected flavor of the banana.

Bisque is best featured from fall through winter as a limited-time offer and makes a great starter on cool fall days. Serve it alongside a pork and apple entrée like maple-glazed bacon-wrapped pork loin with apple celeriac hash for a mouthwatering combination.
