SOUP UP SUMMER'S HARVEST
You may be feeling the urge to say close the book on those hearty winter stews, but you don’t have to cut out soup altogether from your menu. Spring and summer produce—peas, squash, asparagus, spinach, corn—make wonderful light and flavorful soups that won’t weigh you down. Promote the health benefits of any fresh local produce used, or inclusion of super foods as a vitamin/nutrient boost. A super-healthy supper or a lunch - summer soups are a great way to get your five-a-day and make for a quick and virtuous meal.
