SOUP UP SUMMER'S HARVEST

You may be feeling the urge to say close the book on those hearty winter stews, but you don’t have to cut out soup altogether from your menu. Just because warmer days ahead doesn’t mean you can’t make some delicious soups. Take advantage of the season’s fresh bounty to make light, healthy soups that celebrate the flavors of summer.

As people’s dining habits get lighter, seeking local fare, vegetable soups are a great way to get in 5 servings per day of vegetables and promote local menu ties. Spring and summer produce—peas, squash, asparagus, spinach, corn—make wonderful light and flavorful soups that won’t weigh you down. Promote the health benefits of any fresh local produce used, or inclusion of super foods as a vitamin/nutrient boost. A super-healthy supper or a lunch - summer soups are a great way to get your five-a-day and make for a quick and virtuous meal.
