Green Goddess Dressing
This classic, creamy salad dressing was created by the chef at San Francisco’s Palace Hotel in the 1920s to honor actor George Arliss, who was starring locally in a play called Green Goddess. It’s an excellent pairing for mixed greens, chopped cucumber, tomato and avocado.
1 cup Parsley, fresh
2 tsp Minor’s® Roasted Garlic Flavor Concentrate Gluten Free 6x1 lb
8 oz Anchovy, canned in oil, drained mashed or anchovy paste
1 cup Scallion chopped fine
1/2 cup Lemon juice, fresh
1 cup Tarragon vinegar
5 cups Sour cream
16 cups Mayonnaise
1/2 tsp Salt
1/4 cup Green Bell Pepper
1. In a blender, chop parsley to a purée.
2. In a bowl, combine Roasted Garlic, mashed anchovy fillets, scallions, lemon juice, tarragon vinegar, sour cream, mayonnaise, salt and green peppers.
3. Add puréed parsley. Blend well. Chill. Stir before serving with salad greens.
