Meet the Flavor Expedition Winner: Chef Tom Chamot

In a thoughtful and inventive twist, Chef Tom Chamot, the winner of the 2017 Flavor Expedition Recipe Contest, used jackfruit instead of pork and substituted mango for pate in his vegetarian interpretation of the Bánh Mì sandwich. To top it off, Chef Chamot paired this light fare with a bright and aromatic spread of his signature Cilantro Lime crema.

What was the source of his inspiration?

Chef Chamot shared, “As a corporate executive chef I am constantly on the look-out for cutting edge ideas and flavor inspirations. As it so happened, I was exploring variations of a new plant-based Bánh Mì concept when I learned of the contest. I had been toying with using jackfruit as a pulled pork alternative. Pairing a Korean gochugaru sauce on the jackfruit with an infusion of Minor’s pickled veggies, my jackfruit Bánh Mì was born. Using Minor’s Cilantro Lime Flavor Concentrate in my crema was literally the icing on top. It’s easy to make things taste great when you start with great tasting ingredients”.
