Roasted Root Vegetable & Ancient Grain Salad

A hearty mix of roasted mirepoix enhanced farro tossed with a mix of oven-roasted carrots, shallots and chopped radicchio for a little crunch. Topped with fresh thyme, parsley and a squeeze of lemon juice.
