Simple Chicken Brine


This is one of my favorites and has proven to be a necessity when I grill or smoke chicken. Especially chicken breasts as it helps prevent them from drying out during the cooking process.

• ½ cup kosher salt
• ½ cup brown sugar
• ¼ cup Minors chicken base
• 1 gallon of water

Mix all ingredients together and whisk well. Let stand for 5 minutes to let salt dissolve. Whisk briskly. Submerge chicken into brine inside a non-reactive container and cover.

A general rule of thumb is to brine for one hour to every pound. I usually always brine for a minimum of 2 hours and no more than 12.

Note: Some turkey brines call for 24 hours.
