  1. For the hollandaise sauce: add hollandaise to water and whisk, simmer to texture and temperature. Add poblano concentrate to season. Stir until well combined.
  2. For the fish: Grill or sauté fish order. Plate and top fish with poblano hollandaise. Serve with a side of roasted root vegetables.
